Before we get to making the mayo we need to decarb our materials and infuse a base cooking oil of your choice, I will be using coconut oil infused with the Nebula Boost and olive oil but I’ve found avocado oil works well as a replacement for olive oil, it has a beautiful tang that compliments the decarb botanical flavour well.
- 2 egg yolks at room temperature
- 1 teaspoon of mustard
- 2 teaspoons fresh lemon juice
- ½ cup olive oil ¾ cup of decarb botanical infused coconut oil, melted
- Pinch of sea salt and black pepper
Add the egg yolks, mustard, 1 teaspoon fresh lemon juice into your food processor and mix on very low setting. Slowly drizzle the oil in slowly and once the ingredients have bonded, add the remaining lemon juice and salt and pepper to taste.
